Crazy? Need recipe for Hearts of Palm

We have an abundance of Hearts of Palm and I have only tasted them raw a couple of times. These are fresh and I would love to take them to a PotLuck Thanksgiving Dinner. Anyone have some great dips or sauces or salads or...or....or....?
