An early morning freezer search found multiple pie crusts,
so what better to do with one than to make a quiche?
Though there are many wonderful quiche recipes out there,
the following is quick and so easy. Over time, I've learned
a few more tricks about this super quick meal.
You will need:
1 cup heavy whipping cream
1 pie crust
4 eggs
Take a frozen pie crust out of the freezer, set it on the counter.
Turn the oven on at 375°.
Pour one cup of heavy whipping cream into a bowl.
Add four eggs and whatever else you wish. Salt,
pepper, mushrooms, bacon bits, tomato chunks,
a dash of chives, maybe a dash of basil, whatever floats
your boat. Mix until blended.
(great for using up leftovers or tiny amounts of stuff in the 'fridge)
Fix or patch any damage to the pie crust, stick it
into the oven for a few minutes. In this few minutes, you
have time to pour yourself a glass of wine.
Take crust out of the oven, sprinkle cheese in the bottom
of the crust and pour the egg / cream / whatever mixture
into the crust.
Bake 50 minutes. Enjoy!
P.S. Quiche seems to taste so much better the next day,
but baked or oven toasted, and not microwaved.
