Tried a new salad last night...recipe from a New Zealand foodie magazine... makes a wonderful side dish, is colorful and healthy!!
1 grated beet (raw)
1 grated carrot (I julienned both of them)
1/2 cup raisons
1 teas. coriander powder
2 tablesp. lemon juice.
1/2 tablesp. brown sugar
Combine and let them sit in the fridge for about 1/2 hour before serving.
Next I am going to add some fresh coriander to it to see what happens... maybe add some toasted sunflower seeds. (???)
Now he loves beets!!!
