Gravy Recipes?

I'm looking for two new gravy recipes to serve Thanksgiving ... neither of which will use the turkey pan drippings since my BIL is making a fried turkey this year and we won't have any.

One will be a regular, flavorful turkey gravy and the other should be made with vegetable stock for the vegetarians in the family.

I know you folks have some great recipes to share ...
