Roasted Garlic Puree
4 heads of garlic (the entire head, not single cloves)
1 Tbl olive oil
1/4 tsp salt
1/4 tsp pepper
1 Tbl fresh lemon juice
Preheat oven to 350°.
Slice bottoms off heads of garlic to loosen cloves.
Leave skins intact. Place in shallow bakeware.
Drizzle with olive oil Bake for 20 minutes.
Cool, slip from skins and place in food processor.
Add salt, pepper and lemon juice. Process until smooth.
Spread this mild puree on toasted French Bread,
baked potatoes or grilled chicken.
Makes 3/4 cup
