I am going to make a roast today and I wanted to sear it at 500 degrees for I think 20 min ? but I am not sure, then you shut off the oven and let it sit till? ( you must not open the oven) I haven't made this in a long time and I cant find the recipe I used then so I was wondering if anyone knew how long at 500 and how long to let the roast has to sit in the oven before it is done. does anyone know what I am talking about? when it is done it is pink all the way to the edges and it comes out wonderful
