How many ears can you get off of one stalk of corn? I have one main shoot with the green flower-looking stuff, but I have some smaller shoots coming out on the sides. Should I expect ears from these small shoots?

Expect one, some cultivars will do two under the right conditions. Most of the time the second ear will be smaller than than the first ear. Third or fourth ears rarely ever fill out.
The hybridization of corn has reduced the number of ears you get per stalk. It will depend a lot on which kind of corn you plant.
When I was a young'en, we almost always got three per stalk. My last years corn only made one ear each stalk. Ask your seed dealer about the varieties and their differences.

Hey Guys; I bought a corn var.from JLHudson called "6-Shooter" which produces 6 ears per stalk.You do have to plant on wider centers.This corn is becoming quite rare.It is $8-9. a lb.
I grew silver queen this year and got two ears per stalk.
I grew 3 varieties and got one ear per stalk.
I only got two ears from my earliest corn, because there was no pollen left when the later rows started their secondary ears.
