questions about alpinia sandereye strap ginger

Judsonia, AR(Zone 7b)

I recently purchased this amonth ago or so off ebay, and they came as rysomes with stems that had been cut off.

I planted them, but figured they wouldn't do anything. I have some other gingers I bought as rysomes and they are showing themselves. But this one i'm concerned about, no growth . rysomes are still good though.
I 'd like to know the lowest temps this one can take, I bought another ginger that can't go below 50 and it's in the kitchen window doing wonderful. So i'll keep it there all winter.

I don't want to loose this one, and it's cooling off and the pots of dirt aren't drying out as fast as they usually do when the sun is out. And i've stuck this under the bench in the greenhouse where it's also cooler and darker, so it may rot on me. What should I do, dig them up? will they store if I do and not dry out? or put them outside for a few more weeks. We still have another month of no frost probably.

This is the only one of my gingers with no growth on it.

Take it out of the pot and let it dry... why take the chance of it rotting??
