Fertile eggs?

So I am prepared for spring time, do you just try to hatch all the eggs laid or is there a way to tell if they are fertile or not? I will hatch the guineas hopefully under the silkies and the silkies and sebrights can do their own, but just in case.
I am hoping someone is laying for Thanksgiving I LOVE deviled eggs! Oh and my dark partridge may just be a hen after all, I thought she was looking more and more like a roo, it turns out Marshal, my maran roo has been trying to mate with her and has been ripping her top knot out, he got the hose this morning. I just might seperate according to size/breed this coming spring so I don't end up with mutant silkie/marans!

Hi Lora...... Mutant silkie/maran doesn't sound so bad ya know. You have not gotten any eggs since i was there? I wonder if one of the silkies i have did it after all? I got your email and that makes these 20 weeks old....so its possible.
Now ya got me thinking deviled eggs. The girls are doing great. They act like they knew exactly where to go around here. They are very sweet and getting along fine. Wendy

I have had one egg a day and this morning I had two and maybe even a third, she's setting now. I saw what I thought was a silver sebright silkie mix, that was really cute and would even cuter if it was a silver sebright/frizzle mix.....hmmmm .

Which brings up another question, if I am "saving" eggs to make 6 or 12 to give away do I store them in the frig until i have enough to make 6 or a dozen or what? What is best for making the freshest eggs for eating of course

I have just always left mine on the counter till I get a dozen, then put them in a carton in the fridge. I have a wooden egg bowl that sat on my grandmother's counter that I put them in and the rule is to always take the eggs from the bottom to use first. Unless it's really hot, I don't think there is any problem with leaving them out for a few days. Since I've been getting my own eggs, I don't like the flavor of refridgerated eggs. Couldn't tell you why, just think they taste diffrent.
Of course it could have a lot to do with how I realy like the way the eggs look in that bowl on the counter.
