Green (unripe) tomato sauce?

Pelzer, SC(Zone 7b)

My garden is delighting me by starting to produce a second crop of tomatoes :). While I expect to get ripe tomatoes, I also think I'll have a good number of unripe tomatoes to deal with come frost. I love fried green tomatoes, but I don't think I'll want to eat them alllll that way (yes, I'm an optimist). I'm looking for a way to turn them into a sauce with that same flavor, so I can enjoy it on those wintery grey days. I'll be experimenting, but wondered if anyone has done this, and has a recipe to share.
