Place whole peaches on a cookie sheet lined with parchment paper and freeze until solid, then place in freezer bags. When ready to use them, just pop into the microwave for 15 seconds, run under cold water a few seconds and the skin just rolls off. Use any way you want.

I make fruit smoothies every day for my hubby and I, and in the winter use a lot of frozen fruit. I tried freezing some peaches this way about a month ago and tried the first one today. I was amazed that it worked so well.
