Turkey Cassoulet

In the Frugal Living forum, Cathy has begun a thread on using ground turkey instead of ground beef. Less expensive and healthier. Here is my version of a cassoulet - a term the French use to describe any stew containing white beans.

In a flat bottom wok, heat about 2 T. olive oil and saute about 1 cup each chopped celery and chopped onion until limp. Then add a thawed 1 lb chub of ground turkey, stirring until well crumbled and browned. Then add 1 can diced tomatoes, 1 can of corn and 1 can of white beans - I use garbanzos for the nutty crunch. I season with a smidgen of garlic salt. Simmer 10-15 minutes.

This combination has protein and a major portion of the vegetables for RDA. Other vegetables can be used; a friend sautes diced turnip in the first step to replace the corn to which she is allergic.

Ground turkey can be used in "white" chile - again, using white beans.

I'm working on refining a meatloaf version. I also use it in combination with a bit of ham in ham/bean soup.
