recipe tomato canning tip

Ok, I was skeptical - but it Worked!!!!! This came from a local Energy Cooperative Magazine in the recipe section.

Pre-heat the oven to 250 degree's .....
Fill quart jars as you normally would with skinned tomatoes - add 1 teaspoon of canning salt to each jar, make sure the jars are clean of tomato debri and add the lids & screw on the rims, add to a cookie sheet, Leave in the Oven for 1 hour & 30 minutes - turn off the Oven and leave the tomatoes in the Oven overnight - do not open the oven door until morning.

I canned 6 jars of Tomato Juice this way yesterday & if I get more tomatoes I'll make canned salsa for my kids for a Christmas present this December.

I originally posted this to the canning section - this was a helpful tip for me, I dont do alot of canning & I'm not sure how this would work if you can alot , I guess you'd have to have alot of space in between each rack. But I belive I could get 16 jars in my oven , 8 per cookie sheet (2 sheets)
