SOS....ideas please???

I made a big mistake I fear. A dear friend is getting married here on the island in December, and has asked me to help with the cooking. She and Groom are vegetarian, and she likes some vege dishes that I have made for her in the past. Problem is, I will be gone for the month before the wedding! Any ideas of vegetarian type dishes that would be good for a beachside reception AND that freeze well?? That is the kicker, most veges don't freeze, but since I will be gone until three days before the wedding that is what I need to find. HELP!!
