Fresh Ginger

I bought some for a recipe. I was wondering how I should store it. I do not plan on using much of it and was thinking of freezing.
Let me know of any method you use.

I love fresh ginger. I just keep it in the butter part of the refrigerator. It seems to keep quite well.

That is where mine is too. In the butter section. Do you place in a plastic bag? how long do you usually keep yours before buying another piece?

I like fresh ginger too, but it is often way too long between times that I use it and I often found a shriveled and/or moldy root in the bottom of the vegetable drawer. If you use it almost daily, you will probably never have this problem, but if not, you might want to try a tip I read from someone else. Peel the ginger and put it in the freezer in a freezer bag or plastic container. When you need some, just grate the frozen root and add it to your recipe. Put the rest back in the freezer for future use. I tried this and it worked well.

I use ginger fairly often so no trouble with it going bad. I don't put mine in a plastic bag. I think freezing it is probably a good idea if you don't use much. It tends to shrivel up and dry out which doesn't really ruin it.

You can also grate, dry, and store it, or even wait til it sprouts, and plant it, if you live in a warm, humid climate. Ginger can even be grown indoors, as a house plant.
Love the stuff myself, and happen to live 2 blocks from an Asian variety store, where I buy my ginger rhizomes fresh every other day or so, for tea. Nothing like a nice pot of cinnamon/orange spice tea, steeped in hot ginger water...
Plus, every year I make a huge bowl of chai tea, which I bag into individual portions, for giving as holiday gifts, ginger is vital to the chai spices used.

I put my ginger in a pot of potting soil and grow it. It makes a beautiful plant. When you want some of the root, just up turn it up and cut off one or two toes.

It's nothing special...You just add chopped ginger, or freshly dried grated ginger, to boiling water. I use this water as a base for chais, and other spicy teas, gives me a little zip in the winter, and adds a little bite, to my teas.
I'm particularly fond of lemon (verbena or balm or grass) mixed with hibiscus, rose hips, and orange mint and ginger in my winter teas, I make them for the kids when they have sore throats, and for myself, just because they taste terrific, especially w. honey. I also like ginger in the spicy tea mix I mentioned above.
In fact, there's a cup of it in front of me, as I key this post...

We keep a fresh ginger root in a zip loc in the freezer for times we might run out of the one in the 'fridge. It is easy to peel and grate when frozen, and still retains the fresh ginger taste.

Another way to save fresh ginger when you only use it occasionally is to peel and slice it, then put it in a jar and cover with sherry. Refrigerate. Lasts for ages.

Hi,
I use a lot of ginger. I keep the fresh root in freezer--don't even use a bag. Whenever I need it, take it out and use knife to cut it. If it is too frozen to cut, then microwave it for a few secs. After I cut it, I put it back in the freezer again.

Hi PPrice,
most of the gingers in stores have been pre-treated with stuff so that it does not grow. I have had success with gingers that I bought from Asian stores(already have a tiny sprout) and you may consider growing them.
