Hi all, I'm going through an eggplant glut at the moment! after hearing that eggplant is not so good to can in a water bath, I went out and bought a chest freezer yesterday! How do you freeze eggplant and does it go mushy when thawed? OR is it better to make up dishes and then freeze.................thanks for any eggplant advice!!
