Greek Salad recipe-Huge hit

(Taylor) Plano, TX(Zone 8a)

I wanted to share my 'Greek Salad' recipe that has always been such a hit. Everyone that has tasted it, either says how much they like it, or makes me write the recipe down...

The only drawback about this salad, is that it has to be eaten the same evening you make it (It gets soggy/wilted by the next day.) , so great for when family or friends are over to help eat it all up.

GREEK SALAD

1 head iceberg lettuce(I typically always buy romaine for salads, but iceberg is best in this salad)
1 large jar marinated artichoke hearts( 14.75oz.)-or multiple of the smaller jars)~~including the juice from the jar!(very important) Also, I break up the hearts into smaller pieces, so they are not just large chunks.
1 can(soup can size)=or multiple of the smaller cans) of sliced black olives
½ Chopped yellow bell pepper
½ Chopped Orange bell pepper
½ Chopped Large Red Onion
2 square packages of feta cheese
Red wine vinegar & Olive oil to wet the salad
Salt and pepper the salad

There is no dressing for this salad...the red wine vinegar, olive oil, and artichoke heart juice ARE the dressing...

Stir salad to evenly coat, and let meld and hour or two in the fridge before serving.
Enjoy!
