Terrible photo, but it was so fast to make!

kudos to Jacques Pepin for this recipe.

Took a can of cling peaches in heavy syrup. Open can, pour syrup in non-stick pan. Heat on high til the syrup gets boiled down to a goo-ey consistensy - almost light tan like caramel. Put in the peach halves pit side down. Heat another 2 minutes.

Pour in about 3 Tablespoons of cream. Keep heating and then flip the peaches. Keep heating til the cream/syrup mixture returns to boil - only takes maybe a minute.

Put in a bowl with pit side down, pour the mixture over top of them. I drizzled on some raspberry jam to make it more like a peach melba. Chill, eat and smile :) Looks almost like sunny side up eggs !

This is probably the fastest dessert I've ever made - Peaches and Cream and boy is it ever delicious :) Sorry about the photo - I was in a hurry.
