My diabetic educator created this recipe, which we love. How about helping me tweak it?
Healthy Bean Salad
4+ cans of beans of choice OR cooked dried beans like 15 bean soup, etc.
1 large sweet onion, diced small
1 sweet red pepper - diced
3 carrots, cut in rings
a bag of shredded cabbage for cole slaw (or shred your own - red is gorgeous)
Italian Dressing to cover
can also add
tomatoes
cucumber
dandelion greens
raw spinach
green beans
canned corn, drained
mix it all together then add fresh herbs including:
sweet marjoram
sweet basil
tarragon
chives
parsley
Now I need your tweaks. Please let me know what you think. My husband loves to have this in his lunch at work.
let it sit for an hour or more - gets better with sitting.
If you use fat free dressing this recipe is extremely figure friendly and full of protein and anti-oxidants.
