veganism and protein intake

Decatur, GA

I have been vegetarian for 20 years and my son has been vegan since birth. He is now 13, plays competitive soccer and has more energy than you can imagine. We are a very healthy family who rarely gets any illness except a cold occasionally. We do eat some soy products but we also eat various legumes and choose grains that also have proteins such as Quinoa and Millet. We eat nuts and seeds as well. The key to beign a healthy vegetarian or vegan is to eat a variety of fresh foods. Most people eat too much of the same thing and this will limit your mineral intake. We eat sea vegetables and lots of seasonal greens including kale and chard. We make sure eat meal contains a protein (soy or nuts and seeds or legumes) a dark leafy green and some red/orange/yellow veggies and at least one meal will contain a grain that does not have gluten or a high glycemic index such as quinoa, millet, or buckwheat. Basically, don't eat empty calories such as breads, rice, sugars and white potatoes!
