I need some help here. I want to make a recipe and it calls for 6 to 8 dill heads plus additional foliage. Can someone show me what that is exactly.
Thanks,
Jen
One head of dill?
Are you pickling? The head is the flowering portion. The u pick farm in my area grows a nice row of dill for all the canners making pickles. Sometimes the grocery stores carry it in late summer as well. You can probably find it at farmer's markets too!
Here is a nice pic of dill from the plantfiles: http://davesgarden.com/pf/showimage/136649/
I kind of thought it was the flower part based on the pictures in the plant files. I've only ever seen the foliage sold at the supermarkets around here. I meant to grow some, but kind of ran out of room. I want to pickle my snap beans. I have so many. I will also have cucumbers to pickle soon enough. Can I use something else as a substitute? Like dill seeds from the spice aisle if I can't find dill heads?
Thanks again for the help!
Yeah, you can use dill seed. I like using the heads because I add one to each bottle of pickles before I seal them and it just looks nice.
I think the ratio for substitution is 1 tbsp of seed for 1 head. But I don't know for sure. Maybe less is appropriate since it runs in my mind the flavor is stronger in dill seed.
I love pickled beans! I call them dilly beans.
I think dill looks nice, if you run out of room next year, I bet you can sow them in with your ornamentals.
Yeah, dilly beans, that's what I want to make. I'll give it a shot with the seeds. Maybe I can google it and see if a tbsp is the right amount.
I thought about putting the dill with my ornamentals. Maybe I will try that next year. Wonder if the deer will eat them.
Thanks for the help!

Well, I googled it and most sources said one tsp dill seed as a replacement for 1 dill head. One said 1 1/2 tsp dill seed per dill head.
A tsp! Then I was telling you 3 times as much! I'm glad you double checked!
Thanks for helping me get to the spot where I knew what I wanted to look up!
Thanks for finding that substitution... I never seem to have any luck with dill, so sometimes I get stuck without fresh dill on hand. When I do find it, I'll stuff any extra heads and foliage into a jar and add vinegar, so I've got it on hand for later.
In case anybody is thinking, "Dilly beans! Yum!! How do I do those?" I figured I'd post a link to the recipe I've used, http://davesgarden.com/forums/t/523149/
And just because we're talking beans, here's an easy soup using fresh green beans, http://davesgarden.com/forums/t/636697/
