SHould I do anything with this? I have the 3 infls off to the sides that are dark on the top and not appearing to do anything and the one that popped out the middle grew really long and sprouted 2 stalks

Flutter - you have tipless branches. That is ok, they will eventually grow new tips. The long stalk in the center is an inflorescence (inflo for short) and it will shortly give you a few blooms!

Flutter, Hetty is right. I think you have your terminology mixed up. Your inflo (flower stalk) looks great, but your two branch tips -- I can only see the two -- have a problem that looks like black tip, but they also look like they are sprouting side branches so you don't need to do anything.
