My DH and I just retured from a trip that included Victoria, Canada.
While there, we had tea at the famed Fairmont Empress Hotel, the "hoity-toity" place where Queen Elizabeth has "high tea" when she visits.
(If you ever want to do this, be sure to get a reservation about a month in advance, believe it or not! :)
My hubby Roger astounded me by saying he LOVED two of the little finger sandwiches and would like to have them again. I've researched a bit and have not yet found a recipe for either. One I think I can figure out, but the other I need help with.
The smoked salmon one was a pinwheel-like roll, with fresh smoked salmon cut sliver thin, cream cheese, and green onions. Any help with that will be appreciated also.
The other, his FAVORITE (and he HATES CHICKEN!!) was on a dark bread (what kind?) and was curried chicken salad with mango chutney. It appeared that it was put in a blender or food processor, as it was just a pasty layer on the bread. Of course they were all in the "finger" size and had the crusts meticulously cut off.
Any other tea sandwich recipes that are your favorites would be wonderful. I'm in love with them now! I just read at a web site that they seldom include meat, unless it's ground up or VERY thinly sliced.
