beats me, but i probably have the seed packet from last fall. there are just 4 i did not dig last fall and are now about 6 feet tall with lots of seed heads.
darius, when do you usually plant your parsnips?
I'm about to harvest some. A bit out of season, but then our seasons have been off kilter for a couple of years and my summer crop was still going strong when it was time to plant the winter one.
last year was my first time growing them. i think i planted too late in summer because none got very large, nor did my leeks.
i plan to build a box for sand in the root cellar to store them, along with other root crops.

Parsnips are usually left in the ground over winter and then dug in the spring after the ground thaws and before they start putting out large tops.

Thank Red. Mine were planted in early winter (December) and are just now getting big enough to be worth harvesting. I think the Cardoon might have shaded them a bit and slowed the growth. I need more space for Basil, so I'll be yanking them soon, full grown or not.
