Since I got so many great recipes from the forum and all the wonderful stuff is coming out of the garden, I thought I'd pass on two favorites.
Rhubarb Relish
(what ever you do....DON'T double the recipe!
just doesn't work)
1 quart rhubarb
1 pt. chopped or slivered onions, cooked.
4c. brown sugar
1 pt. vinegar
1 tbsp each ground cloves, allspice, cinnamon.
1 tsp. salt
1/2 tsp. red pepper sauce
Combine ingredients. Boil slowly until thick, approx. 30 min.
Makes 2 pints. great on hamburgers, hotdogs, serve with ham or pork.
Pumpkin cake/bread
Freezes well but heat in mic to get more cake texture after freezing.
1c. marg.
4c. sugar
6 beaten eggs
3 c. canned pumpkin
1 c. cold coffee
5 c. flour
1 tbsp. baking soda
3 3/4 tsp pumpkin pie spice
2 1/4 tsp salt
3/4 tsp baking powder
1 1/2 c. raisins
2 c. chopped walnuts
Cream marg. add sugar gradually and beat well. Add eggs, pumpkin and coffee. Sift dry ingredients together and add to pumkin mixture. Mix well.
Stir in raisins and walnuts.
Divide batter into 3 well greased 9x5 in. loaf pans.(have made in bunt pan too)
Bake at 350 for 1 1/4 hours
