When are carrot's ready?

H i everybody, Can someone tell me how to tell when it is time to pull carrots up?

You can start pulling anytime they are big enough for your use. Usually they need thinning so pulling baby carrots is a good way to give the remainder room to grow. Those you don't pull to eat can be left in the ground until a hard freeze is imminent, then pulled and stored in damp sand for winter use. here the ground does not freeze so I leave them in the ground all winter.

Question: Why are we leaving them in the ground if not to eat?

Leaving them in the ground is just convenient storage until you are ready to eat them. The exception is when you want to save seeds. If you overwinter them they will bloom in the spring and produce seeds. Carrots are a biennial. They are also a vegetable without a set harvest date, so you can pull them as you need them.

WOW!!! I did NOT know that, How very cool. I always wondered how you got seeds. (Though in all honesty, I've never done well with carrots. But I keep trying.)
