It's almost a full meal in itself. Contains the basic 4 food groups. It's really good for a breakfast on the run. I grab a couple of these and a cup of coffee and out the door I go.
3 C. quick cook Oatmeal
1 C. Flour
1/2 C. Powdered Milk
1/2 C Peanut Butter
1/2 Can Applesauce
2 Eggs
3/4 C. Sunflower nuts
1 Teaspoon baking powder
1/2 Teaspoon Soda
1 Teaspoon Vanilla
1 Teaspoon Cinnamon
1/4 Teaspoon ground cloves
1/4 C. Honey
1/4 to 1/2 C. Raisins.
I just toss all ingredients into my bread machine pan, let it make a dough, take it out, make 2 inch cookies and bake on a cookie sheet at 350 for about 15 to 18 min. I then divide and package them into 2 or 3 cookies per baggie, and put them into a gallon ziplock and into the freezer.
This is a really sturdy cookie that will sustain you till lunch time and is so convenient to carry along most anywhere.
It has a minimal amount of fat only from the peanut butter, and is sweetened with the applesauce and honey. You can adjust the sweetness and spices if you choose. Or add any kind of nuts or dried fruits etc.
