Chicken in Lettuce Cups

Keaau, HI(Zone 11)

This is a favorite of ours in the summer... The chicken mixture is cooked and then eaten like a taco wrapped in a Butter (Boston) Lettuce leaf -

!/2 pound ground chicken or turkey
1.5 teasp. cornstarch
2 teasp. Chinese rice wine or dry sherry IN A BOWL COMBINE THESE INGREDIENTS AND SET
ASIDE.

1tablesp. vegetable or peanut oil - heat
ADD 1 teasp. minced ginger, 1 clove garlic, minced
WHEN FRAGRANT add the chicken mixture and stir until all crumbly and not pink
ADD 1/2 cup finely chopped water chestnuts
ADD 1 tablesp. toasted rice powder (toast raw rice kernels in dry pan - grind to a powder)
ADD chopped cilantro to taste.

SAUCE: Combine:
1/4 cup hoisin sauce
2 teasp. soy sauce
1.5 teasp. chili garlic sauce
1 teasp. sesame oil

*** The toasted rice powder is optional, but it really gives a unique flavor...good. I bought a coffee grinder that I use just for this and other freshly toasted herbs and spices.

It really is a fun dish... Actually, you can use any sauce you happen to like.
