Really great Gazpacho !

This is more of the traditional Cordoba style Gazpacho. I read a bunch of recipes and then fooled around a bit and came up with one that tasted absolutely great! Hope you enjoy it if you give it a whirl :)

Yummy Gazpacho

I ground 4 garlic cloves with 4 tsp of salt in a mortar and pestle – just keep banging til you get a paste

Added 2 cooked egg yolks and ground again

Added 4 T. of sherry vinegar (or cider vinegar I guess)

Took 2 slices of whole grain bread and soaked them in plain water for 30 seconds or so – then wring them out :)

Put in a food processor or blender with 4 cups of diced tomatoes w/liquid (we used our last years put'ups but canned will do) – blend til it’s all a puree

Keep blending and slowly pour in 1 cup of olive oil

Put this mix in a bowl and mix in: cut up tomatoes, cucumbers, peppers, onions, scallions, parsley – whatever you like (cut it all small)

Chill – pour in a tiny bit more vinegar and some ground pepper to taste – EAT !!!
