I'm sure that pickled GREEN beans came to mind, but I'm looking for a recipe for pickling dry or shell beans like pintos and navy beans. It's apparently an old-timey Appalachian tradition that I ocassionally heard of (like, "my great-grammy used to make that") but nobody remembers how it was done. What I heard was that they were simply washed, soaked, covered with vinegar in a crock and set in the spring house for the winter. Anyone out there know how it was done?
