When its hot & muggy these are the perfect cookies, some call them "Drop Cookies", my mother called them "no Bake Macaroons", (they're great if you need a sweet treat but dont want to heat up the kitchen) We made them alot as children, EASY! Here's the recipe:
No Bake Chocolate Macaroons
Ingredients:
• 1 c. sugar
• 1/2 c. butter (1 stick - margarine is ok too)
• 1/2 c. milk
• 1 c. shredded coconut
• 3 c. rolled oats ( quick)
• 1/2 c. cocoa
Directions:
1. Add the oats , coconut & cocoa to a large bowl & mix thoroughly
2. Bring first 3 ingredients to a boil for 5 minutes, stirring constantly.
3. Remove boiled mixture from heat & add into the Oat/coconut/cocoa mix - mix thoroughly
4. Working quickly, drop by tbsp. onto wax paper lined cookie sheets.
5. Chill until firm.
