Cultivating Ozark Beauty Strawberries

I have 5 beautiful ozark beauty strawberry plants. I made a small raised bed, and they are doing well. They've put out a few berries already that tasted WONDERFUL!. They're all blooming again - but some of the leaves are turning red. Is this normal? Should I trim the affected stems?

Also - my mother-in-law said I should find out how to cultivate the plants so they don't "go wild" and bear untasty fruit. This apparently happened to her. She planted several plants that did well the first year or two - then grew wild and only put out fruit that my SIL says tastes like cardboard. How do I go about "cultivating" these plants to keep the berries sweet?

In most areas, strawberries even the everbearers should be replaced every 2-3 years. There are quite a few diseases that strawberry plant producers control with fumigants. http://www.extension.umn.edu/distribution/horticulture/DG1148.html
