Bitter Spinach

Hi All!

Even though I have been picking my spinach pretty regularly, I picked some yesterday, and when I went to cook it how I normally do (extra virgin olive oil, garlic, salt and pepper) the big leaves were really bitter! Any suggestions on how to cook larger leaves of spinach, or should I just toss them when they get really big?
