I hadn't picked spinach for several days so I had a few large (but not bitter) leaves.
I thinly sliced some roasted chichen breast to put on the spinach, added a thin layer of mashed cranberry jelly, zested some orange rind over it and rolled them up. Great low cal snack or appetizer. The combo of spinach, cranberry and orange was a delightful taste. I think for a simple dinner, maybe adding a baked sweet potato would have sufficed.
