I am new to this forum. I just discovered Recipes and - what a bonus to my subscription, as I also love to cook. I love eggplant and order it whenever I go out. For some reason, I cannot make it and enjoy it. Mine always comes out bitter, undercooked, overcooked, and I end up throwing it out. Does anyone have a secret to cooking eggplant as well as fun and interesting recipes?
