OK - so now what do I do? I only have fruit on a couple of my older caeruleas. Do I pick it off to keep it blooming? Do I feed more? None of my more exotic ones are fruiting but they're still only a year or so old.

You do not have to pick of the fruits to get more blooms. The vine will bloom as is. If you want to feed it, give it a balance meal. If you want to keep the fruits, keep them until they fall off, then keep them in the house until they get very wrinkled, the fruits taste better that way.
your exotic ones, are they hybrids? Don't forget some species/hybrids are self sterile, they will need cross pollination to produce fruits.
