I bought one of those funny racks that holds a can of beer that you slip a roasting chicken over to cook. Well...tried it out for the first time this evening and I have to admit, of all the roasted chickens I have made THIS WAS THE VERY BEST!!!! Wow...it was juicy, tender...just perfect!!! I am sold!!!! We love roast chicken and can make about 4 meals out of one for the two of us: #1 roasted with baked potato and salad, #2 slices warmed in the saved juices over baked potatos and salad #3 meat scraps cold on a plate of baby spinach and stuff for a salad and finally #4 Soup from the bones and whatever I have cleaned out of the vegies drawers in the fridge!
