Frittata

Rehoboth, MA(Zone 5a)

A couple of days ago I posted that I made some a very simple dinner but some thought it was rather complicated to make.
Here as the recipe anyone can make it even cooks not enjoying cooking.

Orzo with Chicken Frittata

3/4 cup Orco (Italian pasta that looks like rice)
6 extra large eggs
1/4 cup creme fraiche (or 1/2 cup whipped creeam cheese)
1/3 cup whole milk riccotto cheese)
1 cup freshly grated pecorino romano cheese ( any grated romano will do, or what ever you prefer as a hard cheese)
2 chicken breasts (I bought a rotisserie one from the market)
4 scallions, chopped
1/4 cup italian parsley, (please do not use cilantro)
1/3 cup roasted red bell peppers, chopped
6 mushrooms, sliced very thin
1 tbl fresh thyme (or tsp dried)
1/4 cup fresh basil, chopped
1/2 tsp freshly ground pepper
1 tsp sea salt or kosher


Bring a small pot of salted water to boil, add orzo, cook for about 12 minutes. drain all but two tbl cool in the pot water left.

In 2 tbl of olive oil, saute mushrooms on medium heat (it is ok to add chopped fresh pepper if you don't have the other, till soft, cool

In large bowl combine eggs, ricotta, creme fraiche, beat till well combined, add all other ingerdients, chicken orzo and all other ingredients, stir

Pour mixture into a 8x12 or so into a well buttered backing dish, sprinke cheese on top,bake for 25 minutes at 375'

Serve with green salad and a loaf of crusty bread
