Buttermilk recipes?

I accidentally purchased a quart of buttermilk last night and rather than return it, I would like to try some buttermilk dishes to expand our repertoire. I have recipes for buttermilk biscuits and a cake, but I was wondering if anyone has a favorite recipe that uses more of the buttermilk. I'm thinking something like buttermilk cucumber soup or anything that you have found you like. I am not inclined to drink the buttermilk straight but am looking to experiment.
