I have a veggie bed (big) and it is full of bur buttercups. I am in the process of blow torching them, but the burs fall to the ground and try to roll away. How hot do I need to fry them and the plants to actually kill them both. Thanks!

If you're using a flame weeder, watch the weed: as it makes a faint "whoof" sound and deflates, you've nailed it. It doesn't need to be black: wait for that little collapse. You'll probably have to do it again in a couple of weeks.
