Best Pimento Cheese Ever!
Mama made this for us when I was growing up in South Carolina. Pimento Cheese seems to be a southern favorite for many. I make it as I remember how she made it and my family and friends love it. Enjoy! Gary
Homemade - Best Pimento Cheese
16 ounces of Sharp cheddar cheese
16 ounces of Mild cheddar cheese
12 ounce jar of Fire Roasted Pimentoes ( or the same amount fresh roasted.) and juices.
¾ to a cup of your favorite mayonnaise.
Dash of Garlic powder
Dash of Onion powder
I hand grate the cheese into a large bowl and let it stand at room temperature for an hour.
In a food processor, puree pimentos and their juice into a smooth paste with no chunks. Add mayonnaise powder garlic and onion and puree again. (I sometimes reserve some pimento and dice into small pieces and add to the mix after everything is blended.) Add cheese and blend thoroughly until smooth. Refrigerate for at least one hour before serving.
