Egg Yolks

I am trying to cut down on the number of eggs that I am eating - trying to lower my cholesterol. I have tried egg beaters and I like them but I think they are very expensive. I tried the store brand and thought they tasted like hospital eggs. I am making scrambled eggs with one egg and two whites.

Can I freeze the egg yolks? I tried frying the egg yolks for the cat but she really didn't like them. Any suggestions?
