need a new potato dish

Having company for dinner Sunday. He really loves potatoes in any way but mashed. This is my Ex.. we are good friends, and so he has had most of my recipes... likes my cooking really well.... I owe him a good dinner for helping me with some home repairs last time he was out. So, since 'taters are one of his very favorites, would like to make something new and good!

I am going to be busy on Saturday, and doing some things on Sunday morning, so would like something I can put in the oven using potatoes that I can boil (with or without the skins) on the day before, and reheat in the oven with something yummy on them while we are grilling meat out on Sunday.

We have an old tried and true recipe using the potatoes put in a casserole dish, topped with melted butter, salt, pepper and snipped chives and parsley, heated through, till light golden brown... but he has had this many times, and I'd like something new.

The rest of the dinner will probably be some sort of asian veggie salad in a peanut/sesame dressing.. depends on what looks good at the store. Hoping for snow peas, bean sprouts, spring onions, cucumbers, etc. The meat will be steak I found on sale a few weeks ago. Dessert is up in the air so far.... perhaps a lime/coconut pie if I can talk my Mom into making it as I won't have time for it... other wise, something very simple - maybe fruit salad and brownies I can whip up in a flash!

He will eat "about" anything, and I have a fairly well stocked pantry.... I am going to the grocery tomorrow afternoon.... so suggest away! Just remember it has to be fairly simple cause I will be short on time, hopefully with potatoes I can boil ahead or put in raw, and the dish needs to go in the oven and not need to be watched over because I'll be outside "womaning" the grill!
