A really good and quick recipe for ground beef

Centertown, MO(Zone 5a)

GROUND BEEF CASSEROLE

2 pounds ground beef
1 medium onion, chopped
one half green pepper chopped (optional)
1 can (15 ounces) refried beans
1 to 2 tablespoons chili powder
2 to 3 teaspoons ground cumin
½ teaspoon salt
4 flour tortillas (7 inches)
1 can (10 ¾ ounces) condensed cream of mushroom soup, undiluted
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 1/2 cups (4 ounces) shredded cheddar cheese

In a skillet, cook the beef, green pepper and onion until the meat is no longer pink; drain. Sprinkle chili powder, cumin and salt on hamburger and stir until mixed well. Transfer to greased 13 x 9 x 2 inch baking dish. Smooth a layer of refried beans over the hamburger mixture. Arrange tortillas over the top. Combine soup and tomatoes; pour over the tortillas. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 30 minutes or until heated through. Yield: 8 servings.
I just prepared this dish for my husband recently and he swears that it is his favorite recipe. I was a little concerned about the tomatos and green chilies causing it to be too hot or spicy, but it is just right. Enjoy!!
