Cross Post: Growing Edible Gingers

I started a thread on the Ginger forum, but haven't had any responses, so thought I would try asking my question here:

I picked up an extra large ginger root while at my organic market today. I would like to try my hand at growing my first ever ginger. I looked through [the gingers] forum for a FAQ or other Newbie thread, but didn't see one. Can someone point me to a good thread for getting started for the first time on growing an edible ginger? I don't even know what the botanical name of this root is ... Anyone? Anyone?

Central, LA(Zone 8b)

Hi I just covered the root with potting soil in a pot and watered. I put 3 roots to a gallon size pot and buried the pot in the ground so they wouldn't get away from me. That was 20 yrs ago and I could probably supply several grocery chains with the root now.
