So I'm making Borscht for dinner and was wondering...

What's the special ingredient that makes your Borscht recipe better than any other recipe?
I'd like to get a little creative with mine. One recipe calls for an apple and mushrooms, but no cabbage.
I like cabbage and was thinking about adding it anyway.

Any suggestions?

I did find this thread http://davesgarden.com/place/t/537213/ but aside from green beans and buckwheat I didn't really find anything too unusual.
