Yesterday was my Chef Judy day. I didn't do anything but cook, cook and cook. Reminded me of the days when my friend, who was a real Chef, and I would get together to cook. Then we had to get on the phone calling friends asking them to come over because we were cooking. We also knocked on his neighbor's doors and presented them with "today's delights".
Pork roast in the crockpot with my special blend of spices (garlic salt, black pepper, basil, thyme, parsley and a tad of sugar). I make this up in a pint jar which is about 1/3 full when I finish. I coat the bottom, sides and top, by rolling the roast in some of the mixture which I have place on a large plate. The remainder I put on top of the roast once it is in the crockpot. I cook it until the large meat fork can pierce half way through the roast When it is done, I rake off the top layer of spice since it is too much for the amount of broth that is left. I. We eat BBQ sandwich, just sprinkle dry BBQ seasoning on the meat once it is on the bread or use bottle BBQ sauce. I cook potatoes and carrots in the pork broth, then take them out and make gravy with the broth. It goes without saying that "our gang, dogs & cats" gets the leftovers if there are any. lol lol
I cooked Bruschetta (Eggplant,Mushroom & Tomato) which we ended up eating for Brunch: bread then a layer of mozzarella cheese, layer of Bruschetta, another layer of cheese, broiled in the oven. So very good!! After that I made Pasta Sauce to have on hand for homemade pizzas, meatball sandwiches or over pasta. At this point I had to quit cooking or it would be going straight to the dogs since the refrigerator was FULL!! I keep telling Bob (BibDaddy99) we need a second one, but he just laughts.
All that does sound wildly over the edge doesn't it, but I sure had fun. lol lol - Judy
PS I forgot to tell you I cooked a medium pot of Cranberry Beans, my favorite variety of dried beans, with a ham hock and also a pot of Chinese Red Beans, tiny little things. The only recipes I could find for them were "sweet soup" oops I don't do sugar so they got the same treatment as the other beans except I added crushed dry red pepper, minced garlic and dried onion flakes. See why we need a second refrigerator!!!
