Need recipe for German Rouladen

Hello folks,

My German MIL is coming for a visit and I would like to surprise her with a dinner of rouladen and potato pancakes. I have read different recipes with pickles and some without pickles. What is the authentic version? Anyone have a tried and true recipe to share?
