Summer Plant Dates San Antonio/New Braunfels Area?

New Braunfels, TX(Zone 8b)

I mess this up every year, so I thought I'd ask advice this year.

Anyone in my area with experience - can you tell me when it is "safe" to plant the following in my area which is between
San Antonio & San Marcos (I live in New Braunfels)

Amaranth
Pole Beans
Peppers (transplants)
Tomatoes (transplants)
Soy Beans & Purple Hull Peas
Zucchini & Cucumbers

I truly appreciate advice. Every year I end up either planting too soon or too late - I can never seem to get it right. I don't have this problem with cool weather stuff - just summer stuff.

Veggie, We usually wait till maybe even April to plant pole beans. They grow so fast, and I don't think they like the cold. Tomatoes you can plant now, but you better have some really good protection from frost because that can happen even in April. I'm not sure about the rest.

I was at the nursery the other day and there was a man buying tomatoes - said that frost we had Sunday night dig the ones he had in and he had them covered. What do you use to protect yours?

I haven't had time to plant mine yet. And I'm going to plant mine in pots this year, because there's never enough room in the garden. So this year I'm trying pots. It'll be easier to harvest them because I can walk all the way around the plant without stepping on some poor defensless lettuce or something. In the past I piled up a bunch of mulch around the plant, but not touching it. And then rapped it with a blanket. It's a hassle but it works.

Milk Jugs cut off at the bottom also work for a dip in Temps. Leave the screw top in place and you can open or close it to allow air in for a mini greenhouse.
