I have a golden russet and a cox orange pippin tree- do those trees require pollinators and will they pollinate each other?

According to the Inner Coast Nursery list they bloom only 5 days apart so you should be fine. I don't think either is a triploid.
I would in any case consider grafting a variety or two onto each tree in the event one of the trees dies to give backup pollination. You also get to try out a couple apples of other varieties.
